In 2009, I participated in my first 60-day Bikram Yoga Challenge. This meant practicing Bikram Yoga everyday for 60 days. Inspired by the progress made, I came up with a new idea. What about a 30-Day Dinner Salad Challenge? This is a commitment to eat ONLY salads for dinner for 30 days straight. Notice that I highlighted the word dinner. Eating salads for lunch everyday is easy or I should say easier. I am not a BIG fan ( but hey better than heading to the vending machine). The biggest meal of the day should always be breakfast and then lunch. You need to provide your body with energy. Your smallest meal should be your dinner. If you have salad for lunch, what are you going to have for dinner? I now follow this salad dinner challenges 2-3 times a year along with some friends. These are the rules:
- 3/4 of the salad must be mixed greens. You can use baby arugula, spinach, radicchio, leaf lettuce, romaine, etc.... The rest can be any vegetable which can be raw, steamed, baked or stir-fry. You can also include fruits & nuts and/or protein.
- Salad dressing: oil & vinegar or low-carb alternatives ( preferable homemade)
- NO croutons, pasta, potatoes nor bread in the salad.
- Dinner drinks: only water and/or a glass of red wine.
- Take pictures of every single salad and share them with friends *
*This is probably the most difficult rule. When you are hungry at night time, after a long day at work, the last thing that you want is to spend 10 minutes taking pictures of your salads. You just want to eat them !! However, it's worth it. Soon, you will build a nice collection of edible art !!
